Sausage & Parmesan Spinach Dip

Ok, so to be honest, the first time I made this dip I added pancetta in addition to the sausage and it was totally amazing! I have been toying with this question, Are double meats acceptable? I have no clue, but I seem to do it often.

First of all, if you have never mixed ricotta, mascarpone, and Parmigiano Reggiano, you have not lived! Exaggeration? Maybe… The creaminess is unbelievable and the blend of cheeses adds so much deliciousness. I use the trio quite often when looking for that punch of Italian!

Sausage and Parmesan Spinach Dip
Ingredients:
1/2 lb.ground sausage
2 cups spinach
2 tbsp. olive oil
1 small onion, chopped
3 cloves garlic, chopped
1- 1/2 cup ricotta cheese, squeeze liquid out
1/4 cup mascarpone cheese
1/2 cup Parmigiano Reggiano + fresh grated for topping
salt/pepper to taste

Directions:
Preheat oven to 350 degrees.
Brown ground sausage in a pan. Remove to a plate.
Add olive oil, onions, and garlic to the pan and cook until softened and onions are translucent.
Throw in spinach at the end to wilt.
In a mixing bowl, combine cheeses, sausage, salt and pepper and mix well. Hold a little sausage back to crumble on top.
Bake 18-25 minutes or until cheeses are melted together and firm.
Top with fresh grated Parmigiano Reggiano and serve with your favorite baguette, crackers and vegetables!

Spinach and Goat Cheese Stuffed Meatballs!

Spring is here! So on a recent grocery run I picked up some spinach and crumbled goat cheese. You know, to make my favorite Springy salads- spinach, fruit, pecans, topped with goat cheese and a drizzle of olive oil or a fruity balsamic. So today I made…stuffed meatballs. Ha!image

At least I used the spinach and goat cheese, right?

I only had one lonely pound of ground beef. This might be the reason I decided to stuff. I honestly love a beef/pork combination with loads of garlic and fresh grated parm. The unique thing about meatballs is that they are a blank canvas. Adding Greek flavors, Mexican flavors, Bacon and Cheese, takes the Italian meatball on a fun vacation!

Stuffing the meatballs adds an element of surprise. My kids took their first bites and my Brady, age 7, says, “Hey mommy, what did you hide in here.” As he’s chewing spinach happily I just smiled. Bella said, “Is this goat cheese?” Ummm, my Bella is almost 5 and hates goat cheese- unless it’s hidden really well. Apparently, the meat heavy garlic, and spinach wasn’t enough camouflage. Nope, she reached for a spoon and scooped out the goat cheese and ate the rest of her meatball. She told me I shouldn’t post this one.

Here is the recipe…

Spinach and Goat Cheese Stuffed Meatballs

Ingredients:
1 lb. ground beef (use your favorite meatball meat ground turkey, ground veal, or a mix!)
3 cloves of garlic, finely chopped
1/4 cup panko breadcrumbs
1 egg
salt/pepper
1/3 cup crumbled goat cheese
1/3 cup spinach, finely chopped

Directions:
Preheat oven to 350 degrees.
In a large mixing bowl, mix meat, garlic, breadcrumbs, egg, salt and pepper.
Using your clean hands, mix well until all ingredients are incorporated.
Section off 1/2 inch clump of meat mixture and flatten.
Place one tablespoon goat cheese and one tablespoon of spinach on patty.
Roll up the sides and top with an equal amount of meat and form into a ball.
Put meatballs on a cookie sheet one inch apart and bake 12-18 minutes until desired doneness.
Top with finely chopped spinach and crumbled goat cheese and serve.

Strawberry Basil Fontina Bites!

Have you ever found yourself needing appetizers in a pinch? Most of the time I whip up an Italian meat, cheese, and olive tray. My go-to tray not only pairs perfectly with the drinks, which most often accompany my need for appetizers, but is also super easy to create because the ingredients are always in my refrigerator!

Spring into entertaining in the warmer months and winter appetizer choices seem overused.  Spring clean your recipes and replace the winter palate with sweet and savory small bites, with a ton of color of course! Easy and delicious are equally important qualities of these quick appetizers. Seasonal fruits and herbs are absolutely scrumptious with cheeses. What cheese works best? A solid but creamy cheese with a strong taste is always on point.

Don’t forget the finishing drizzles. I am currently obsessing over Vincotto’s Fig. A sweet and smooth vinegar, made from fig juice aged in oak barrels. It is versatile, tasty, and totally addicting! So here is my latest creation…enjoy!

Strawberry Basil Fontina Bites

Ingredients:
12 strawberries, washed and destemmed
12 medium basil leaves
4 oz. fontina cheese, cut into 2 inch squares
toothpicks
Vincotto Fig vinegar for drizzle

Directions:
Stack one piece of cheese, one basil leaf, and one strawberry stem side down.
Spear with a toothpick.
Drizzle vinegar to taste.

Vegetable & Chicken Stuffed Zucchini Boats

Healthy, delicious, quick and easy meals do exist! Often the easy part of the recipe involves planning ahead, having the ingredients on hand, or in this case, using up what’s in the fridge!

Chop up left over vegetables to create the filling for the scooped out zucchini boats. Use what you have – I did! Carrots, celery, mushrooms, spinach would all be delicious too. The chicken can easily be left out to create a vegetarian version of the dish.

Here is the recipe…

Vegetable & Chicken Stuffed Zucchini
(Makes 2 boats)

Ingredients:
1 medium zucchini, cut in half and scoop out half of zucchini
1/2 small red onion
1/2 bell pepper, sliced or chopped
3/4 cup broccoli florets
1/4 cup sun dried tomatoes
1 cloves garlic, finely chopped
1 small chicken breast, diced
2 tbsp. olive oil
salt/pepper to taste
fresh gated Locatelli Romano

Directions:
Pre-heat oven to 350 degrees.
Add olive oil, scooped out zucchini, and garlic to a hot pan.
Sauté onion, pepper, broccoli, tomatoes, and chicken.
Salt/ pepper.
When vegetables are cooked but still crisp, spoon mixture into zucchini boats.
Bake 350 degrees for 20-25 minutes until zucchini softens.
Remove from oven and top with grated Locatelli Romano.

Butter Toffee Pecan Chocolate Chip Cookies!

I love a butter toffee crunch! My favorite salad is mixed greens, dried cranberries, crumbled goat cheese, and butter toffee pecans. I incorporated them into a simple chocolate chip cookie recipe and the results are totally delish!!
Not a fan of a nutty bite? Grind the pecans down instead of a coarse chop for a smooth finish.

Butter Toffee Pecan Chocolate Chip Cookies
(makes 3 dozen 2 inch cookies)

Ingredients:
2 cups flour
1 tsp. baking soda
pinch of salt
1 cup unsalted butter
1/2 cup sugar
1/2 cup light brown sugar
1 tsp. vanilla extract
2 eggs
2 cups chocolate chips
1 cup coarse chopped butter toffee pecans

Directions:
Preheat oven to 350 degrees.
Using a mixer, cream butter and sugar.
Add eggs, baking soda, salt, and vanilla and mix on low until incorporated.
Slowly add in flour until dough forms.
Mix in chocolate chips and pecans with a wooden spoon. Mix well so each scoop contains chips and pecans.
Drop by teaspoonfuls, 2 inches apart, onto a parchment lined cookie sheet.
Bake 12-15 minutes until golden brown.

Sweet & Spicy Veggie Soba Noodles!

We are totally serious about our Meatless Mondays. Why not have one day during the week where meat is out? I find it is much easier to scrape up a quick last minute dinner when meat is not involved. No worries of defrosting or pre-planning. Monday’s veg dishes are simple and delicious!

I bought some soba noodles because, like pasta, they are a blank canvas. We love a sweet and spicy sauce so I made a light honey sriracha soy sauce using a ginger infused soy. Oh my is this sauce perfection for a soba noodle dish! Of course I added lots of veggies including shitake mushrooms. Not only are shitake mushrooms a big part of Japanese cuisine, but they add that “meaty” bite that is totally not meat! Ha! This dish can be made in under 20 minutes and is 100% kid approved, just adjust the heat based on preference. A little of the sauce goes a long way especially because the dish is already lightly coated with the oil. Here is the recipe!

Sweet & Spicy Veggie Soba Noodles
Ingredients:
2 tbsp. olive oil
2 shallots, finely chopped
4 green onions, chopped
3 carrots, cut into matchsticks
1 red bell pepper, chopped
1 can water chestnuts, drained
1 pint shitake mushrooms, stems cut and halved/quartered to desired size
1 1/2 lb. package pre-cooked buckwheat soba noodles
3 tbsp. honey
1 tbsp. sriracha
1/4 cup ginger infused soy sauce

Directions:
Heat olive oil in a pan.

Add veggies that take the longest to cook first, then add the rest of veggies and cook until al dente.

In a small saucepan, add soba noodles and 1 tbsp. sauce.

With your fingers, gently separate noodles until all come unstuck.

Heat through and add to pan with veggies, mix well and add more sauce until desired amount is reached.

Top with green onions!

Roasted Chicken Salad

For a refreshing summer luncheon or back to school favorite , homemade roasted chicken salad wins the “hits the spot” award. I cannot stand a wet, super mayonnaissy, yogurty, sour creamy (eek!) consistency. So I add the minimum amount ever of mayonnaise to moisten – I know, there is seriously no other word to be used here- some sweet grapes and the crunch of celery to the dressing.

Super short cut. You can totally buy a rotisserie chicken at the grocery store. Take out bones and skin, shred or dice. I like to make a whole roasted chicken for dinner and make this chicken salad with the leftovers. That is why I say 1/2 chicken because that is usually what’s left! Smooth and delicious with a crunch, this roasted chicken salad can easily become your go-to recipe!

Here it is…

Roasted Chicken Salad

Ingredients:
1/2 chicken
2 tbsp. olive oil
salt/pepper
1/2-1 cup mayonnaise
1-1/2 tsp. dill
1 cup grapes, halved
3 stalks celery, chopped

Directions:
Preheat over 350 degrees.

Rub chicken with olive oil and sprinkle with salt and pepper.

Bake 35-50 minutes, until chicken is cooked through.

Cool chicken and dice or shred.

Mix the dressing by adding your comfortable amount of mayonnaise, grapes, celery, and dill.

Fold in diced chicken and mix well.

Add more mayo if needed! Remember, I like my chicken salad on the dry side so feel free to add away!

Chill and serve with crackers or on your favorite bread or roll!

Greek Quinoa Salad!

Ready for the long weekend? Memorial Day picnics require the perfect picnic sides. Cold side salads are always a hit. One of my favorites is a Greek quinoa salad! A healthy, quick and easy salad bursting with the traditional and refreshing Greek flavors we love.

Tomatoes, cucumbers, red onion, feta cheese, and a whole lotta squeezed lemon!

This heathy Greek quinoa salad can be served alone or alongside grilled favorites! No guilt and totally healthy, superfood quinoa is a protein powerhouse. Give this salad a try!

Greek Quinoa Salad

Ingredients:
1-1/2 cups quinoa
3 cups water
3/4 cup tomatoes, chopped
3/4 cup cucumber, chopped
1 small/medium red onion, chopped
1/2 cup pitted kalamata olives, chopped
1/2 cup crumbled feta cheese
4 lemons, squeezed
Salt/Pepper
Oregano
Fresh parsley, chopped

Directions:
Rinse quinoa in a strainer to remove any sediment.

In a medium saucepan, add water and quinoa.

Being to a boil and summer for 12-18 minutes or until quinoa is soft but still firm to the bite.

Drain quinoa well and cool.

Once the quinoa is cool, add all other ingredients to a large mixing bowl.

Squeeze lemon juice and add oregano, salt and pepper to taste. Garnish with fresh parsley and/or chop some and throw it in.

Strawberry Lime Mascarpone Tart!

A fruity, refreshing tart is totally Spring- totally Summer! Do you ever switch it up? Instead of the usual strawberry blueberry sweet tart, how about a sweet and tangy strawberry lime tart?

Today’s recipe is just that- A step outside the usual, a hint of lime and creamy whipped mascarpone cheese. I don’t think a fruit dessert can get any better. At heart, I’m really a chocolate girl! Shhhhh!

Strawberry Lime Tart
(Makes one 8 inch tart)
Ingredients:

Tart Crust:
1 cup flour
1/2 cup powdered sugar
1 cold stick butter cut into squares

Filling:
1-8oz. Mascarpone cheese
1/2 cup powdered sugar
1 tsp. vanilla
1 tsp. lime juice

Topping:
Strawberries – Lime Zest

Directions:

Heat oven to 325 degrees.

Grease a tart pan or a 1/2″ inch thick 8″ round cake pan.

Whisk together flour and powdered sugar.

Add in chunks of butter and work with your fingers until it starts to stick together and forms a dough.

Wrap in plastic wrap and chill for 30 mins. in refrigerator.

Roll out into an 8 inch circle.

Press into pan. If using cake pan leave a small overhang to be folded over.

Bake crust 10-12 mins or until golden.

Let cool.

In a mixing bowl, whisk together mascarpone cheese, powdered sugar, and 1 tsp. lime juice.

Add filling and top with sliced strawberries and lime zest!
Get creative! Make a beautiful design or mass chaos. Either way, it tastes the same!

Rice Krispies Treats Easter Eggs! Adorable And Fun Treats!

Is it the crispy bite or the gooey yummy marshmallow we love so much about Rice Krispies treats? Loved by children and super easy to make, Rice Krispies treats can be made fun and festive with a drop of food coloring or an addition of colored sprinkles!

To make the colorful treats, divide the butter/marshmallow mixture into thirds and added yellow, green, and purple (red and blue) coloring. Then add the cereal, mix well, and mold into a nonstick coated plastic egg! These can be a sticky mess so be sure to also grease your hands!
Enjoy making these treats everyone will love!

Rice Krispies Treat Easter Eggs
(Makes approx. 30 1-1/2 inch Eggs)

Ingedients:
6 cups Rice Krispies cereal
3 tbsp. butter
1 10 oz. bag mini marshmallows
food coloring

Directions:
Melt butter in a saucepan over low to medium heat so it doesn’t burn.

Add marshmallows and stir until melted and the ingredients are incorporated.

Remove from heat and separate into thirds- three mixing bowls.

Add food coloring to reach desired colors.

**It is important to work quickly at this point. Mix in the cereal before the marshmallow starts to harden.

Add 2 cups of cereal to each bowl. Stir with a wooden spoon until cereal is coated.

Grease hands and a plastic Easter egg. Press the cereal into the egg. After a few seconds, remove the cereal egg and place it on a piece of waxed paper.

Serve in an egg carton or in the plastic eggs!
