Garlic Herb Roasted Chicken Quarters

Chicken quarters are inexpensive, juicy cuts of deliciousness. Consisting of a leg and a thigh, they have skin that can be pan seared, or taken off to make them healthier.

Seasoning with a garlicky, salty dry rub on top of a very thin layer of garlic oil adds a finish to the chicken. Spice it up by adding some cayenne pepper or sweeten them up with some brown sugar or cinnamon.

Garlic Herb Roasted Chicken Quarters

Ingredients:

4 cloves garlic, finely chopped
1 tsp. dried oregano
1 tbsp. chili powder
1/2 tbsp. ground cumin
2 tbsp. garlic olive oil-
Salt/pepper
4 chicken leg quarters
1/2 cup chicken broth
1/4 cup white wine

Directions:
Preheat oven to 375 degrees.
Lightly oil a baking sheet.
Cut off excess fat and trim chicken Quarters.
Rinse and pat dry.
In a small bowl combine garlic, oregano, chili powder, cumin, salt and pepper.
Brush each chicken with a light layer of garlic olive oil.
Coat with herb and spice mix.
Before adding chicken to the baking sheet, add chicken broth and white wine to 1/4 inch.
Place chicken Quarters on a baking sheet.
Roasted in oven 25 minutes or until juices run clear.

Serve with your favorite side dishes!

Creamy Broccoli Cheese Soup!

I can eat soup for every meal in the winter! I usually make broth and then add ingredients accordingly, very rarely making a cream soup. I do love a chowder!

Broccoli Cheese is my favorite to make homemade. I’m sure it has something to do with my Cheese obsession! The cooking tv show I cohost, Between The Eats, partners with Beemster Cheese, so I thought I would try their creamy Beemster Lite this time. Here is the recipe…

Broccoli Cheese Soup
Ingredients:
2 tbsp. olive oil
3 cups chicken stock
2 cups broccoli florets
1 large onion, diced
2 carrots, chopped
2 tsp. salt
1/4 teaspoon freshly ground black pepper
4 garlic cloves, finely chopped
1 cup half-and-half
4 ounces Beemster Lite Cheese , ribbons for garnish

Directions:
Heat oil in a pan and add onion and garlic until soft and tender.
Add chicken stock and broccoli and cook until tender.
Pour into blender (I used my Ninja) and blend until fine.
Add in half and half and Beemster cheese.
Garnish with cheese ribbons and parsley.

Garlic Ricotta and Roasted Brussels Sprouts Pizza!

This is cooking stripped down to the bare bones. No need for fancy herbs, spices, or ingredients. The best brussels sprouts are tossed with olive oil salt and pepper and roasted until crisp on the edges.

My Brady ,7-years-old, will not eat brussels sprouts even if they are “candied”. My mommy description that should win the war. Technically? Yes, they caramelize, thus that makes them candied. So I was making him a pizza and ended up making a second with ricotta and Brussels sprouts! This combination is delicious!

Garlic Ricotta and Roasted Brussels Sprouts Pizza

Ingredients:
2 cups brussels sprouts
2 tbsp. olive oil
Salt/pepper
1/3 lb.thick pancetta, cut into small cubes

For the ricotta base mix,
2 cups fresh ricotta cheese
3 cloves garlic, finely chopped
salt/pepper

Your favorite prepared pizza dough or shell.
Parmigiano Reggiano for topping. (I used 14 month aged)

Directions:
Preheat oven 400 degrees.
Clean and slice brussels sprouts in half.
Toss with olive oil, salt and pepper.
Roast until browned to desired likeness and remove from pan.
Meanwhile, cook pancetta bits in a pan until crispy.
Add the pancetta to the brussels and mix well.
Cover the pizza shell with ricotta mixture.
Add brussels sprouts/pancetta layer.
Top with fresh grated Parmigiano Reggiano cheese.

The Best Sloppy Joes Ever!

The perfect sloppy joe is not too tangy, a sauce with a balance of sweet and spicy. No ketchup. I think that ketchup must be the ingredient that I have never liked in homemade sloppy joe sauce.

A friend said to me, “Why would you make your own sloppy joe sauce?” I have become a big proponent of knowing what I am eating. With all of the preservatives and additives in a canned sauce, I think it’s a great idea to enjoy a DIY version.

My kids love sloppy joes and these are easily prepared as a quick meal for a busy family.

Here is the recipe:

The Best Sloppy Joes
Ingredients:
1 lb. ground beef
1/2 small onion, finely chopped
1/2 bell pepper, finely chopped
1/4 cup brown sugar
2 cloves garlic, finely chopped
1 tbsp. Worcestershire
1 tbsp. Sriracha sauce
2 cups tomato sauce
1 can tomato paste
Salt and pepper

4 your favorite sandwich rolls
Sliced jalapeños
Leafy lettuce
Pickles, sides

Directions:
Brown the ground beef, pepper, and onion in a pan.

Drain grease.

Add all other ingredients to the slow cooker and cook on low 4 hours.

Serve on sandwich rolls with a lettuce base, topped with jalapeños, a pickle, and your favorite sides.

Sicilian Garlic Oregano Grilled Potatoes!

Quick and easy summer recipes continue with grilled sliced potato recipe. Bursting with flavor, these potatoes have an herb salty garlicky bite with the creaminess of the sour cream finish! These potatoes are fabulous with summer seafood!

Sometimes I grate Parmesan cheese over the grilled slices and forget the sour cream!

A tip that I recently learned from my co-host Chef David on Between The Eats is that you want to place the potato slices in cold water and bring the pot up to a boil. By doing this the inside and outside of the potato have a chance to get to the same temp for even cooking. This eliminates the outisde of the rounds smushing. Has this ever happened to you? It’s the worst! Your recipe will become starchy from broken potato pieces falling off.

Here is the recipe…

Ingredients:
2 large potatoes, sliced 1/4 inch slices
2 tbsp. Olive oil
1 tsp. Onion powder
1-1/2 tbsp. Dry oregano
Salt/pepper to taste
3 cloves roasted garlic, minced
3-4 tbsp. Sour cream
Parsley or chives

Directions:
Boil sliced potatoes from cold water until a knife test shows just softened, but still firm potatoes.

Drain and cool 5 minutes.

Meanwhile heat the grill to a medium flame.

Add potato slices, olive oil, oregano, onion powder, garlic, salt and pepper to a Gallon ziploc bag.

Gently coat potatoes being careful not to smush.

Place a piece of foil on the grill grate, and line up the potatoes being careful not to overlap.

Grill 4-7 minutes until bottom is golden brown and flip. Grill another 3-5 minutes until done.

Remove from grill, toss with sour cream, sprinkle with chives or parsley and serve.

Kafta Kabobs!

Kafta, Kofta, Kefta…every translation spells it differently! Let’s call it meat on a stick. Ok, really flavorful meat on a stick.

With Lebanese exotic flavors of cumin, cinnamon, and of course the garlic, Kafta has a deep layering and tastes like a full meal. Often served cold for lunch, or hot for lunch or dinner, it is a fun opportunity to try something different that is really quick and easy to make.

My kids are fans because it is on a stick I think. They first started eating “things kids aren’t supposed to like” when skewered. Try it, seriously!

A few tips, I used an egg. (Gasp!) Kafta is traditionally stuck together by using soaked white bread that’s rung out and put in the food processor. Yeah, So are traditional meatballs, but sometimes you don’t want to clean the thing, right? Feel free!

Soak the sticks! I forgot and a few of mine burned!!

The cucumber salad is amazing and accompanied meat dishes quite often on my table in the summertime.

And guys, the sauce…simple and delicious! It’s more powerful than a smoothe tahini with the punch of Romesco. I used a delicious jarred Romesco, but you can get crazy and make your own!

Kafta Kabobs

Ingredients:
1 lb. ground beef
3 garlic cloves, finely chopped
1 small onion, finely chopped
1/4 cup parsley, finely chopped
1 egg
1 tsp. Allspice
1 tsp. Cumin
1/2 tsp. Paprika
1/2 tsp. Cinnamon
Salt/pepper to taste
Skewers

Directions:
Soak skewers in water for at least one hour until ready to mold the

Heat grill to 300 degrees.

With hands, mix beef, garlic, onion, egg, and all of the spices, salt and pepper.

Mold 1/6 of the mixture onto one end of each skewer trying to keep mold to 1 inch thickness.

Grill approximately 4 minutes each side until cooked to desired fineness.

Cucumber Salad

Ingredients:
1 cucumber chopped
1 pint grape tomatoes, halved
1 small red onion or Vidalia onion, sliced
Handful parsley, chopped
1 lemon , squeezed
3 tbsp. Garlic oil
Salt/pepper to taste

Directions:
In a large moxing bowl, toss to coat.

Greek Yogurt Romesco Sauce
1/4 cup plain Greek Yogurt mix with
1/4 cup Romesco
Chopped Parsley flakes and sliced tomato garnish

Spinach and Goat Cheese Stuffed Meatballs!

Spring is here! So on a recent grocery run I picked up some spinach and crumbled goat cheese. You know, to make my favorite Springy salads- spinach, fruit, pecans, topped with goat cheese and a drizzle of olive oil or a fruity balsamic. So today I made…stuffed meatballs. Ha!image

At least I used the spinach and goat cheese, right?

I only had one lonely pound of ground beef. This might be the reason I decided to stuff. I honestly love a beef/pork combination with loads of garlic and fresh grated parm. The unique thing about meatballs is that they are a blank canvas. Adding Greek flavors, Mexican flavors, Bacon and Cheese, takes the Italian meatball on a fun vacation!

Stuffing the meatballs adds an element of surprise. My kids took their first bites and my Brady, age 7, says, “Hey mommy, what did you hide in here.” As he’s chewing spinach happily I just smiled. Bella said, “Is this goat cheese?” Ummm, my Bella is almost 5 and hates goat cheese- unless it’s hidden really well. Apparently, the meat heavy garlic, and spinach wasn’t enough camouflage. Nope, she reached for a spoon and scooped out the goat cheese and ate the rest of her meatball. She told me I shouldn’t post this one.

Here is the recipe…

Spinach and Goat Cheese Stuffed Meatballs

Ingredients:
1 lb. ground beef (use your favorite meatball meat ground turkey, ground veal, or a mix!)
3 cloves of garlic, finely chopped
1/4 cup panko breadcrumbs
1 egg
salt/pepper
1/3 cup crumbled goat cheese
1/3 cup spinach, finely chopped

Directions:
Preheat oven to 350 degrees.
In a large mixing bowl, mix meat, garlic, breadcrumbs, egg, salt and pepper.
Using your clean hands, mix well until all ingredients are incorporated.
Section off 1/2 inch clump of meat mixture and flatten.
Place one tablespoon goat cheese and one tablespoon of spinach on patty.
Roll up the sides and top with an equal amount of meat and form into a ball.
Put meatballs on a cookie sheet one inch apart and bake 12-18 minutes until desired doneness.
Top with finely chopped spinach and crumbled goat cheese and serve.

The Best Egg Salad Ever!

Use up your leftover hard boiled eggs and transform them into a creamy egg salad you can slather on some fresh bread. The flavor is bold, but very comforting. I totally forget about egg salad! With Easter right around the corner, you have the eggs already made, so….

Of course you could just mix the eggs with mayonnaise, but that is totally boring. Channel the flavors of your favorite deviled eggs, the spicy, the sweet, the savory. By savory I absolutely mean BACON! First, you need my perfect hard boiled eggs recipe. Now, the egg salad…

The Best Egg Salad Ever

Ingredients:
6 hard boiled eggs
1 cup chopped bacon, cooked
1/2 cup mayonnaise
3 tbsp. spicy mustard
1 lemon
salt/pepper
fresh dill, finely chopped
paprika, sprinkle
your favorite soft bread

Directions:
Add hard boiled eggs to a large bowl.
Mash with a fork or coarsely chop into squares.
Add mayonnaise, mustard, salt and pepper to taste.
Mix in chopped bacon.
Squeeze 1/2 lemon.
Top with fresh dill.
Spoon a heaping pile of egg salad between two slices of fresh bread.

Steak Stroganoff

Beef stroganoff is a mix of sautéed onions mushrooms and tender beef finished with sour cream. Usually served over buttered noodles, traditional Russian stroganoff is served over mashed potatoes or rice. Definitely a true comfort food, the stew-like dish warms the belly… and the heart.

The trick to stroganoff is creating tender bites of meat. This recipe uses the “london broil” method instead of a braised beef top round, which I find to be too tough.

Other options are beef tenderloin or a sirloin steak cut into 2 inch strips. I finish the meat in red wine to tenderize and add flavor. Red wine softens the meat’s muscle fibers creating a juicy, tender bite.

Here is the recipe…

Steak Stroganoff
Ingredients:

2 tbsp. Butter
2 tbsp. Olive oil
1 large onion, sliced thin
2 8oz. Packages of button mushrooms, sliced (or any of your favorite mushrooms)
2 lbs. “London broil” labeled beef or Beef tenderloin filet
1/2 cup red wine
1/2 cup beef stock
3/4-1 cup sour cream, add until desired richness
Salt/pepper

Directions:
Preheat oven on high broil.
Heat butter in a pan.
Add sliced onions and cook until soft.
Add mushrooms, drizzle olive oil, salt and pepper to taste.
Mix all together and sauté 3-5 minutes. Remove from pan and set aside.
Salt and pepper steak and broil 4-5 minutes per side until slightly under medium rare in the center.
Let stand for 10 minutes and slice against the grain.
Meanwhile, boil water and cook orzo according to package.
Add wine and stock to pan to heat placing meat in the middle to absorb flavors, tenderize, and finish off to desired doneness.
Add mushrooms and onions and mix well.
Remove from heat and add sour cream and stir until creamy.
Serve stroganoff over orzo.

Easy Cinco de Mayo Cheese Ball!

Think of an inside-out jalapeño popper. That’s pretty much the taste of this delicious and super easy cheese ball! Cinco de Mayo perfection, but it’s also the perfect summer party appetizer! Save and file this one for a summer fiesta! Pairs really well with tequila ; )

Cinco de Mayo Cheese Ball
(Makes one cheese ball feeds 8-10 as an appetizer)

Ingredients:

1 -8 oz. package of Cream Cheese, softened
1- 2 cup package shredded Mexican cheese
2 – jalapeño peppers, chopped (may substitute bell peppers or mild hot peppers to reach desired heat level)
1 large tomato, chopped
1 small onions, chopped
2 tbsp. chili powder
1 tbsp. cayenne pepper
1/2 tsp. cumin
salt and pepper to taste
2 cloves garlic, finely chopped
1/3 cup finely chopped cilantro

Directions:

Soften the package of cream cheese either by setting on the counter at room temperature for 30 mins or by placing cream cheese in a bowl of hot water for 10 mins.

Remove cream cheese from package and place in a mixing bowl.

Add shredded cheese and mix well.

Gently stir in peppers, tomatoes, onions, chili powder, cayenne pepper, cumin, salt and pepper.

Mold cheese mixture into a ball. It will be a little mushy.

Mix garlic and cilantro together and place on a flat plate.

Roll the cheese ball in the chopped garlic cilantro mixture to coat.

Wrap cheese ball in plastic wrap and refrigerate for two hours.
